Perfect for school lunchboxes.
2 cups Gluten free flour
1 cup pitted dates, chopped
1/2 cup brown sugar
1 teaspoon Baking powder
1 teaspoon Bicarb soda
3 over ripe bananas, mashed
1/2 cup oil
1/2 cup rice milk
Preheat oven to 180 degrees C.
Grease a muffin tray or line the muffin tray with paper cases.
In a medium sized mixing bowl, sift together the flour, baking powder and bi carb soda. Stir in sugar.
In a separate bowl, mix together the bananas, oil and dates. Add rice milk and stir until combined.
Fold the wet mixture into the flour mixture until just combined. Be carful not to over mix.
You'll probably be thinking you need more rice milk at this stage, but it will come together.
Spoon mixture into the prepared muffin tray.
Bake for 20 minutes.
